Contessa's Baked Eggs

Eggs.  Wonderful little eggs.  They are the power food, incredibly versatile and incredibly satisfying.  Due to a chronic case of laziness I usually scramble them up for breakfast, but one morning my boyfriend came across this recipe for herb-baked eggs in Ina Garten’s cookbook Barefoot in Paris, and wow, I’m glad he did.  It’s a handsome dish, creamy, full of herbs and a kick of parmesan cheese.  You could prepare them in advance for a brunch, or maybe it’s a nice Valentine’s day brunch treat, served with a bellini on the side?  Yum.
